Matcha quality is determined by several factors: the harvest time (first flush vs later flushes), shading period, leaf selection, grinding method, and final texture. Generally speaking, the earlier the harvest and the finer the powder, the higher the grade.

1. Excellent Matcha – Ceremonial Grade (Top Tier) This is our highest quality matcha. It comes from the very first tender buds of the spring harvest (pre-Qingming), grown under heavy shade in high-altitude gardens in Zhejiang and Anhui.

  • Color: Vibrant, intense jade green
  • Texture: Ultra-fine, almost silky with almost no grittiness
  • Taste: Deep umami, creamy-sweet, nutty, long finish with zero bitterness
  • Best for: Traditional usucha and koicha, pure enjoyment, meditation

Price range: Highest Best for: Tea enthusiasts, collectors, and anyone who wants the absolute best experience.

2. Premium Matcha – Very Good Ceremonial Grade A step below Excellent, but still excellent quality. Harvested slightly later in the first flush period from well-shaded gardens.

  • Color: Bright, vivid green
  • Texture: Very fine powder
  • Taste: Strong umami, creamy and sweet with light grassy notes and very low bitterness
  • Best for: Daily ceremonial bowls, high-quality matcha lattes, iced matcha

Price range: Very good value Best for: People who drink matcha every day and want high quality without the top price.

3. Daily Matcha – Good Everyday Grade Designed for regular use. Comes from early-to-mid spring harvest with shorter or no shading.

  • Color: Pleasant medium green
  • Texture: Fine to medium-fine
  • Taste: Fresh, grassy, mild, slightly sweet with light umami and very low bitterness
  • Best for: Matcha lattes, smoothies, baking, everyday drinking

Price range: Affordable Best for: Beginners and people who enjoy matcha as part of their daily routine.

4. Culinary Matcha – Cooking & Baking Grade Made from later harvests with minimal shading. Stronger and more robust.

  • Color: Intense dark green
  • Texture: Medium to coarse grind
  • Taste: Bold, grassy, more bitter — stands out well in recipes
  • Best for: Lattes, smoothies, ice cream, cakes, energy balls, sauces

Price range: Budget-friendly Best for: Home bakers and people who use larger quantities of matcha in cooking.
