Shēng Pu-erh: The Raw Spirit

Shēng Pu-erh is the original form of Pu-erh tea, often called “raw” or “green Pu-erh.”

• Flavor Profile: Fresh, lively, with notes that range from floral and fruity in youth to deep, honeyed, and complex with age.
• Energy: Brisk, vibrant, sometimes even sharp when young, but evolving into a smoother, more elegant character over decades.
• Aging: Shēng is a tea that grows with time. Stored well, it transforms year after year, becoming softer, sweeter, and layered like an aged wine.

Drinking young Shēng is like standing in a bright mountain forest; drinking aged Shēng is like walking through history itself.

Shóu Pu-erh: The Crafted Depth

Shóu Pu-erh, also known as “ripe” or “cooked Pu-erh,” is a relatively modern style, developed in the 1970s to mimic the flavors of well-aged Shēng in a shorter time.

• Process: Through a controlled fermentation method called wo dui (wet piling), the tea undergoes microbial transformation.
• Flavor Profile: Earthy, mellow, and smooth, with notes of wood, dried fruit, and sometimes cocoa or leather.
• Energy: Grounded, calming, and warming—an evening tea, comforting and rich.
• Aging: While Shóu can also age, its transformation is subtler; the bold earthiness mellows over time, becoming gentler and rounder.

Drinking Shóu is like sitting by a fire on a rainy night—grounded, warm, and deeply satisfying.
